Greippichermoula / Grapefruit chermoula

 
 
Olen jo pari vuotta tilannut amerikkalaista Bon Appetit-ruokalehteä, jonka joka numerosta löytyy aina mielenkiintoisia ohjeita. Söimme viimeisimmästä numerosta löytämääni greippichermoulaa ensin broilerin kanssa,  ja pari päivää myöhemmin avokadon tai lohen kanssa (säilyy 5 vrk jääkaapissa). Kertakaikkisen hyvää, olisin voinut syödä chermoulaa aivan sellaisenaan!

Nyt teidän on aika kaivaa esiin tekemänne säilötyt sitruunat, niitä tarvitaan tähän reseptiin (ja ne ovat loistava lisäke moneen ruokaan sellaisenaan sekä osana monia oivallisia reseptejä). Teittehän niitä kun kehotin? Jos jostain kumman syystä jäi tekemättä, helppo resepti löytyy täältä. Säilöttyjä sitruunoita löytyy myös Lähi-Idän ruokia myyvistä liikkeistä, jollette malta odottaa sitruunoiden tekeytymistä.
 
Greippichermoula
 
greippi
1 iso salottisipuli, hienonnettuna
2 valkosipulin kynttä, hienoksi raastettua
3 rkl tuoretta sitruunamehua
1 tl suolaa, plus lisää
½ pieni säilötty sitruuna, ilman hedelmälihaa, kuori hienonnettuna
1 dl hienonnettua tuoretta korianteria
2 rkl oliiviöljyä
2 tl hienoksi raastettua kuoritut inkivääri
2 tl harissa ahnaa
1 ½ tl jauhettua jeeraa
1 tl hunajaa
½ tl tomaattipyrettä
Vastajauhettua mustapippuria




Leikkaa terävällä veitsellä kuori ja valkoiset osat greipistä; heitä pois. Leikkaa hedelmäliha (ilman kalvoja kulhoon. Purista greipin kalvoihin jäänyttä hedelmälihaa jotta saat 2 rkl. mehua; hävitä kalvot.


 Yhdistä salottisipuli, valkosipuli, sitruunamehu ja 1 tl. suola keskikokoiseen kulhoon; Anna seistä 10 minuuttia (tämä pyöristää salottisipulin ja valkosipulin makuja). Sekoita greippi, säilötty sitruunankuori, korianteri, öljy, inkivääri, harissa, kumina, hunaja, ja tomaattipyree; mausta suolalla ja pippurilla.

 
 
I've already a couple of years ordered  American Bon Appetit food magazine, in every issue there are always several interesting  recipies. We ate grapefruit chermoula that I found in the latest issue with chicken, but it is delicious also with avocado or salmon.

Now it's time to dig out from the fridge your preserved lemons, they are needed for this recipe (and they are a great side dish for many foods, and as part of the many excellent recipes). Grapefruit chermoula
 
1 grapefruit
1 large shallot, finely chopped
2 garlic cloves, finely grated
3 tablespoons fresh lemon juice
1 teaspoon kosher salt, plus more
½ small preserved lemon, flesh discarded, peel finely chopped
½ cup finely chopped fresh cilantro
2 tablespoons olive oil
2 teaspoons finely grated peeled ginger
2 teaspoons harissa paste
teaspoon ground cumin
1 teaspoon honey
½ teaspoon tomato paste 
Freshly ground black pepper


    

Using a sharp knife, cut all peel and white pith from grapefruit; discard. Working over a medium bowl, cut between membranes to release segments into bowl. Squeeze in juice from membranes as needed to make 2 Tbsp. juice; discard membranes and reserve any extra juice for another use. Coarsely chop segments; return to bowl.

 

Combine shallot, garlic, lemon juice, and 1 tsp. salt in a medium bowl; let stand 10 minutes (this will mellow shallot and garlic). Mix in grapefruit, preserved lemon peel, cilantro, oil, ginger, harissa, cumin, honey, and tomato paste; season with salt and pepper.
