Tarte tatin tomaateista | Tomato tarte tatin




 



Äskettäin ilmestyneestä Prisca Leclercin Tarte Tatin-kirjasta* ensimmäisenä osui silmään tomaatti tatin, jota testasinkin kirjan resepteistä ensimmäisenä.

25 v. sitten saamassani rautapannussa on puukahva ja se on vuosikymmenien patinoitumisen tuloksena ihan suosikkipannuni. Puukahvan takia ole koskaan tehnyt tatineita. Yht'äkkiä kuitenkin tajusin, että puuosan saa ehkä irti. Niin sen saikin, aika helposti. Kahvan paikoilleen saaminen olikin sitten toinen juttu!

Ohjetta oli tatin-ensikertalaisenkin helppo noudattaa, annoin tatinin tosin olla uunissa muutaman minuutin kauemmin kuin ohjeessa. Pohja mureni jonkun verran kumotessani sitä lautaselle, mutta pikku fiksauksella siitä tuli ihan esittelykelpoinen. Piirakan parina tarjosin pinaattisalaattia vadelmavinaigreten ja paahdettujen pekaanien kera*

Tarte tatin tomaateista
 
pohja
125 g voita
½ dl tuoretta timjamia tai 2 tl kuivattua
3 dl vehnäjauhoja
1 tl suolaa
1,5 rkl kylmää vettä
 
täyte
500 g kirsikkatomaatteja
1 valkosipulin kynsi
1 rkl sokeria
25 g voita
½ tl suolaa
1 rkl valkoviinietikkaa
 
Ota pohjan voi ajoissa lämpenemään. Tee pohjataikina; pilko timjami pieniksi. Mittaa jauhot kulhoon, lisää joukkoon suola ja pehmeä voi palasina. Nypi voi jauhojen joukkoon, kunnes seos on tasaisen karkea. Lisää joukkoon timjami ja sekoita. Lisää kylmä vesi, vaivaa ja painele taikina nopeasti pallon muotoon Jos taikina tuntuu hajoavan, eikä pysy pallona, lisää vielä hieman vettä. Jätä taikina kulhoon lepäämään.
 
Laita uuni lämpenemää 200 asteeseen.

Tee täyte; pese ja kuivaa tomaatit. Murskaa valkosipulinkynsi veitsen kyljellä, kuori ja pilko pieneksi. Mittaa sokeri ja voi uuninkestävälle paistinpannulle. Anna voin ja sokerin sulaa pannulla keskilämmöllä, kunnes ne saavat hieman väriä, noin 2 min. Lisää kirsikkatomaatit pannulle. Anna paistua keskilämmöllä noin 3 mi. Lisää valkosipuli, suola ja valkoviinietikka. Anna paistua keskilämmöllä vielä 9-10 min, tomaatteja varovasti välillä nostellen, kunnes neste on suurimmaksi osaksi haihtunut ja voi ja sokeri ovat muuttuneet hieman siirappimaiseksi.
 
Ota pannu pois liedeltä, asetele tomaatit kauniisti. Ota taikina osissa käteen, litistä se käsien välissä ohueksi levyksi (0, 3 cm) ja asettele tomaattien päälle pala kerrallaan. Laita pannu uuniin 20-25 minuutiksi, kunnes taikina on saanut hieman väriä uunista tulvii karamellimainen tuoksu.

Ota pannu pois uunista ja anna jäähtyä (jähmettyä) muutaman minuutin. Kumoa tatin tarjoilualustalle. Tarjoa vihreän salaatin ja juustojen kera.

The firs trecipe that catched my eye in recently released Prisca Leclerc's Tarte Tatin-book* was  tomato tatin and it was the first recipe I tested first from the new cookbook.


I have an iron pan I got 25 years ago, after decades of weathering it's my favorite pan. Due to the wooden handle've never done tatins. Suddenly, however, I realized that the wooden part might get off. So it did, pretty easily. Getting a handle back in place was another story!


Recipe was easy follow, although, I let the tatin stand in the oven for a few minutes longer than the recipe. The dough crumbled somewhat when I turned tatin around on a plate, but with a some fixing it became quite presentable. I served tatin with spinach salad with raspberry vinaigrette and roasted pecans.



Tomato tarte tatin

base
 

125 g butter


½ dl fresh thyme or 2 teaspoons dried

3 dl flour1 teaspoon salt

1.5 tbsp cold water
 

filling


500 g cherry tomatoes

1 clove garlic

1 tablespoon sugar

25 g butter

½ teaspoon salt

1 tablespoon white wine vinegar
 

Let butter warm up before use. Make a dough base; chop thyme. Measure the flour into a bowl, add salt and soft butter cut in pieces. Mix the flour in, until the mixture is roughly smooth. Add thyme and stir. Add cold water, knead and press the dough quickly into a ball shape. If the dough seems to crumble, rather than stay in a ball, add a little more water.
Leave the dough to rest in a bowl.
 

Set the oven temperature to 200 degrees. Make the filling; wash and dry the tomatoes. Crush the garlic clove with knife, peel and chop. Measure the sugar and butter in an ovenproof iron cast frying pan. Let the butter and sugar melt in a pan over medium heat, until they get a little color, about 2 minutes. Add cherry tomatoes to the pan. Let fry over medium heat for about 3 min. Add garlic, salt and white wine vinegar. Let fry over medium heat for another 9-10 minutes, lift the tomatoes gently between, until the liquid is mostly evaporated and the butter and sugar are getting little syrupy.

Take the pan off the heat, arrange tomatoes beautifully. Take the dough in parts on your hand, flatten it between your hands into a thin sheet (0, 3 cm) and place on the tomatoes a piece at a time.


Put the pan in the oven 20-25 minutes, until the dough has got little color and air is flooded with caramel aroma.

Remove the pan from the oven and allow to cool (solidify) a few minutes. turn on a serving tray. Serve with a green salad and cheeses.
