I posted about eggs baked in oven a while ago. Eggs are so versatile, but this is one my favorites, so I had to make them again, this time without salmon as we had sausages with eggs.
Baked eggs with cold smoked salmon
Serves 2
20 g butter for greasing

Preheat the oven to 180°C
Butter two deep ramekins. Crack in an egg and season with salt, then add a tablespoon cream to each ramekin and (sprinkle over the Pecorino).
Arrange the ramekins in a roasting tin and pour in enough boiling water to come about halfway up each ramekin. Place in the oven and bake for 15 minutes, until the eggs are just set but the yolks are still runny. Lift tomato cubes on top of eggs. Set a ramekin on a warmed plate.
